Here is my version of the famous TikTok trend of baked pasta. Instead of using feta like in most recipes, I use a container of vegan cream cheese (made from cashews) from LeGrand - the taste is SO creamy. The rest is quite classic, cherry tomatoes, pasta and spices. Since the start of the trend, a lot of people have fallen in love with this recipe and make it again every week. INGREDIENTS
2 pints cherry tomatoes
Pasta of choice
1 container vegan cream cheese from LeGrand
2-3 garlic cloves
Fresh chives, finely chopped
Olive oil
Sea salt
Italian seasoning (basil, oregano)
STEPS
1. Preheat the oven to 350 °F.
2. In a baking dish, place the tomatoes, chives and garlic. Add the vegan cheese in the middle. Drizzle with olive oil, and season with sea salt and Italian seasoning.
3. Bake for 30-40 minutes.
4. In the meantime, cook the pasta, drain & set aside.
5. When done, remove from the oven, mix the cooked pasta in the baking dish until well coated.
6. Serve with more chives.
