CREAMY COCONUT LENTIL CURRY

This recipe warms my heart! The mixture of coconut milk, lentils, kale and spices makes this recipe so comforting. A sure hit.


INGREDIENTS

1 onion, finely chopped

1 head of cauliflower

2 cloves of garlic

1 can of lentils, rinsed and drained

1 tbsp ginger

1 tbsp curry powder (or curry paste)

1 tsp turmeric

Pinch of cinnamon

1 cup vegetable broth

1 can coconut milk

4 cups kale or spinach

2 tbsp tomato paste

2 tbsp corn starch

STEPS

1. On medium heat, heat up olive oil and cook the onion, garlic and cauliflower for about 5 minutes.

2. Add the lentils, ginger, curry powder, turmeric and cinnamon and cook for about 2 minutes.

3. In a small bowl, mix the corn starch with ¼ cup of vegetable broth.

4. Add the corn starch and the rest of the ingredients to the pan. Bring to a boil, then lower the heat and simmer for 10 minutes.
