My energy balls recipe is so simple and delicious. You could even add protein powder to make it an even more filling snack. It's quite rare that I snack, but when I have these balls in the fridge, they satisfy my hunger and my desire for sweets.
INGREDIENTS
1 cup old fashioned oats
½ cup flax seeds
2/3 cup unsweetened shredded coconut
1 cup vegan mini chocolate chips from Enjoy Life
½ cup peanut butter
¼ cup maple syrup
STEPS
1. Mix all ingredients in a large bowl until well combined.
2. Place mixture in the fridge for 25 minutes.
3. Roll into balls and place on parchment paper lined baking sheet. Freeze for at least an hour, then remove the balls from parchment paper and place in a glass container to store in the fridge.
