FRUIT & YOGURT MUFFINS

Passion: fruity muffins. These muffins have an incredible texture, since I used vegan yogurt to replace the usual oil.


INGREDIENTS

1 1/2 cup all-purpose flour

3/4 cup coconut sugar

Pinch of salt

2 tsp baking powder

3 tbsp melted Vegan Butter from LeGrand

1 cup Unsweetened Vegan Yogurt from LeGrand

1 half mashed banana

1 tsp vanilla extract

1 cup frozen fruit


STEPS

1. Preheat oven to 375°F. Place 12 cases in muffin tins and set aside.

2. In a bowl, combine the flour, sugar, salt and baking powder. Set aside.

3. In another bowl, combine the melted butter, yogurt, banana and vanilla extract. Pour over the dry ingredients, then mix.

4. Add the fruit, fill the muffin tins, then bake for 25 minutes. Leave to cool before eating.
