If I was asked what is the recipe we make most often on weeknights in a hurry or when we have no idea what to prepare? My answer would definitely be Tofu Pad Thai! This recipe is packed with flavor and truly nutritious.
INGREDIENTS
1 bloc extra firm tofu, diced
¼ cup of corn starch
Extra virgin olive oil for cooking
Bell pepper
Green onions
½ cup edamame
1 piece of ginger, minced
2 cloves of garlic, minced
2 tbsp tamari sauce
2 tbsp maple syrup
2 tbsp ketchup
1 tsp sriracha
½ cup vegetable broth
Rice noodles
Sesame seeds
STEPS
1. In a small bowl, coat the diced tofu with the corn starch.
2. Heat the oil in a large pan on medium-high heat and cook the tofu until crispy, about 5 minutes.
3. Add the rest of the ingredients (except the rice noodles and sesame seeds), and let it cook until it thickens, about 10-15 minutes.
4. In the meantime, cook the rice noodles.
5. Serve and sprinkle with sesame seeds.
