GREEK BUDDHA BOWL

This mediterranean inspired dish screams summer time! I love to enjoy textured vegetable protein in a buddha bowl like this but there is many way to add tvp in your meals. In wraps, on top of salads and even as a ground meat replacement in any recipe - I do this all the time!


INGREDIENTS for the bowl

1/2 cup uncooked whole wheat couscous

1 package of Greek style tvp from Les Brutes

2 cups greens of choice

Cucumber, sliced

Cherry tomates, cut in half

Drizzle with dressing

Flat bread, optional


INGREDIENTS for the dressing

1/4 cup extra virgin olive oil

2 tbsp red wine vinegar

1 tsp Dijon mustard

1 tsp dried oregano

2 garlic cloves, minced

Juice of a lemon

Salt and pepper to taste


STEPS

  1. Cook the couscous according to package directions.

  2. Rehydrate the tvp with a cup of boiling water and let it sit for 10 minutes.

  3. In the meantime, prep your dressing in a small bowl and set aside.

  4. Assemble your bowl with the veggies, couscous, tvp and dressing.

  5. Serve right away and enjoy!
