This recipe is definitely one of our favorites at home - we must make it at least twice a month. It's fresh, it's nutritious, it's diversified - we love it. Here's my version of a vegan poke bowl.
INGREDIENTS for the marinated tofu
1 block firm tofu
¼ cup tamari sauce
1 tbsp rice vinegar
1 tsp sriracha
1 tbsp sesame oil
2 garlic cloves, minced
1 tbsp ginger, minced
INGREDIENTS for the bowl
Cooked wild rice
Cucumber
Edamame
Dulse
Green onions
Sesame seeds
STEPS
1. Whisk the marinade, then cut the tofu in cubes. Put the tofu in a shallow dish and pour the marinade in. Toss the tofu so each piece is well-coated and let it rest for at least 15 minutes.
2. Assemble the bowl with all the ingredients and drizzle with the excess marinade.
