I love a good tofu dish & this one doesn't disappoint. A delicious & quick peanut butter tofu stir-fry for those week nights when you don't know what to cook & want something fast!
INGREDIENTS for the sauce
1/3 cup unsalted natural peanut butter
3 tbsp rice vinegar
2 tbsp tamari sauce
1 tsp maple syrup
1 tsp sriracha
INGREDIENTS for the stir-fry
1 package extra firm tofu, drained & cut in cubes
3 tbsp corn starch
2-3 cups veggies of choice, chopped (I used bell pepper, cauliflower, green onions)
3 cloves garlic, minced
2 tbsp ginger, grated
Oil for cooking
STEPS
1. In a small bowl, combine all ingredients For the sauce. Whisk until smooth & set aside.
2. In a medium bowl, mix the tofu with the corn starch.
3. In a large non-stick skillet, heat about 1-2 tbsp of oil on medium heat & cook the tofu until crispy. Transfer to a plate and set aside.
4. In the same skillet, add some more oil and cook your veggies, garlic & ginger for about 5 minutes or until tender. Add water if it sticks.
5. Add the peanut butter sauce to the pan & stir the vegetables into the sauce. Add the reserved tofu & cook, stirring until heated through. Add more water if you prefer a creamy sauce.
6. Serve with rice or rice noodles & sprinkle with sesame seeds.
