This pesto pasta salad is a staple for when you have no idea what to eat for lunch & want something quick. You can make it your own and throw in any ingredient that you have on hand that I personally didn't use in this recipe (think tomatoes, celery, balsamic vinegar, nutritional yeast, etc.) To be enjoyed under the sun!
INGREDIENTS
Pasta of choice, cooked
Lettuce, chopped
Bell pepper, chopped
Cucumber, diced
Green onions
Garden pesto from LeGrand
Tofu feta, optional
Sea salt to taste
Extra virgin olive oil, drizzle
STEPS
1. In a large bowl, combine all ingredients & enjoy.
