PESTO TOFU CHOPPED SANDWICH

My take on the viral chopped sandwich! This one's loaded with good stuff. The base is shredded tofu, mixed with veggies & the magic touch - LeGrand Garden Pesto!


INGREDIENTS for the shredded tofu

1 block extra firm tofu, shredded

1 tbsp tamari sauce

1 tsp garlic powder

1 tbsp nutritional yeast

1/2 tsp salt

Pepper

1 tsp veggie broth powder from Organika

Extra virgin olive oil, for cooking


INGREDIENTS for the chopped sandwich

Lettuce

Tomato

Cucumber

Bell pepper

Green onion

Shredded tofu

Garden pesto from LeGrand

Bread of choice


STEPS

1. In a large bowl, place in grated tofu along with all of the seasonings. Toss until everything is well-mixed.

2. In a pan, heat oil over medium-high. Add tofu and spread it evenly on the pan. Cook for 3-5 minutes, making sure to stir once in a while to avoid sticking.

3. On a chopping board, add all the lettuce, tomato, cucumber, bell pepper, green onion, shredded tofu and garden pesto. Using a knife, chop up the sandwich mixture. In the meantime, toast your bread.

4. When the bread is toasted, put some sandwich mixture on it and enjoy.
