It's officially summer time & what a perfect time to try out my pesto tofu skewer recipe! If you have a bbq, even better, but if you're like me & you don't - just use skewers and bake in the oven. It is SO delicious. Best enjoyed with a salad or/and rice.
INGREDIENTS
1 block extra firm tofu, cubed
1 bell pepper, diced
1/2 red onion, diced
1 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp salt
3 tbsp garden pesto from LeGrand
Side salad
STEPS
1. Preheat the oven to 425°F. Cover a baking sheet with foil.
2. Into a medium size mixing bowl, add cubed tofu. Add olive oil & toss to coat. Add garlic powder & salt and toss again. Add pesto and toss to evenly distribute.
3. Alternately thread tofu cubes, bell pepper & red onion onto each skewer. Place skewers on the baking sheet & bake for 25 minutes. Turn the oven to broil at the very end for only a minute.
NOTES
If you have a bbq, feel free to use. If you're not in the mood for skewer, put the tofu mixture on a parchment-lined baking sheet & bake in the oven for the same amount of time.
