LOADED VEGGIE BOWL

This bowl is inspired by a popular fast-food place in Canada called Poulet Rouge. In my opinion, it's similar to Subway where you get to pick & choose every ingredient you want to make a bowl. There is so many ways to recreate this so feel free to substitute any ingredients for what you prefer! I personally love using TVP as a plant-protein for the texture since it's the most similar to ground meat but you could also use tofu, tempeh, legumes or veggie ground.


INGREDIENTS for the TVP mixture

2 cups TVP (textured vegetable protein)

1 small onion, chopped

3 tbsp tamari sauce

2 tbsp ketchup

1 tbsp chili powder

1 tbsp maple syrup

Salt & pepper

Oil for cooking


INGREDIENTS for the bowl

Base of choice: rice, cauliflower rice, quinoa, couscous (I used cauliflower rice in this bowl)

Vegetables of choice: cucumber, cherry tomatoes, lettuce, beets, bell pepper, green onions, corn

Dressing of choice: spicy mayo, balsamic vinegar, dijon mustard, pesto, bbq sauce (I made a spicy mayo for this bowl using vegan mayo + sriracha)


STEPS

1. Place the TVP in a large mixing bowl. Rehydrate the TVP with boiling warer, cover & let it sit for about 10 minutes.

2. In the meantime, start cooking the onion in a pan with oil for about 5 minutes.

3. Add all the other ingredients “for the TVP mixture” to the pan (except the TVP). Mix well, then add the rehydrated TVP.

4. Let the mixture evaporate for around 10 minutes, then serve.

5. Start making your bowl with the TVP & all the ingredients ''for the bowl'' & enjoy.
