PROTEIN BALLS

I make this protein balls recipe EVERY week - it's my boyfriend's favorite breakfast. Unlike me, he doesn't like breakfast so much and isn't always hungry. These protein balls ensure that his breakfast is light, but nutritious enough to sustain him until lunch. Use whatever protein powder you prefer, along with the rest of the ingredients, and voila!


INGREDIENTS

1 cup oat flour

1/4 cup flax seeds

1/4 cup unsweetened shredded coconut

1 scoop protein powder of choice

1/4 cup nut butter of choice

1/4 cup maple syrup

Handful vegan dark chocolate chips (optional)


STEPS

1. Mix the dry ingredients in a medium bowl

2. Add the liquid ingredients and mix again

3. Form balls in your hand or with an ice cream spoon. *Add more liquid if it’s too dry

4. Store in airtight container in the fridge. Wait at least an hour before eating.
