I love adding quinoa to my salads to get even more nutrients. In addition to quinoa, this salad contains sauerkraut (a probiotic), microgreens (a superfood), and lots of other goodies.
INGREDIENTS
Arugula
Cooked quinoa
Cucumber
Bell pepper
Green onions
Tomato
Sauerkraut
Sprouts
Hemp seeds
Nutritional yeast
Sea salt
Extra virgin olive oil
Red wine vinegar
Nuts
STEPS
1. Mix all ingredients in a large bowl & enjoy.
