RICE CEREAL & MARSHMALLOW MAPLE TREATS

Mission - veganize a childhood dessert. Who hasn't eaten the classic Krispies square as a child? A nostalgic recipe that I wanted to veganize today in addition to adding a special touch to it - maple syrup.


INGREDIENTS

1/2 cup Vegan Butter from LeGrand

1/2 cup maple syrup

1 bag (around 250g) Vegan Mini Marshmallows from Dandies

Pinch of salt

6 cups rice cereal


STEPS

1. Melt the vegan butter in a large saucepan over medium heat. Add the maple syrup and stir with a silicone spatula until the syrup boils. Add marshmallows and a pinch of salt and stir constantly until marshmallows are melted and mixture is smooth.

2. Turn off the heat and remove the pan. Add the cereal and stir well to incorporate into the marshmallow mixture.

3. Spread the mixture into a pan lined with parchment paper (I used a 9x9 pan). Press well so that everything is compact.

4. Leave to cool in the fridge for at least 2 hours, then cut into squares and store in the fridge.
