These S'mores cookies are perfection if you ask me! The combo of chocolate and marshmallows brings you back to childhood instantly. You will find it so easy to veganize any recipe using Becel Plant Butter! Plus, the flax seed egg really mimic the texture of an egg. Try it and see for yourself!
INGREDIENTS
1 tbsp flax seeds
2.5 tbsp water
3/4 cup coconut sugar
1/2 cup Unsalted Plant Butter from Becel
1 1/4 cup white flour
1 tsp baking powder
1/4 tsp salt
2/3 cup vegan chocolate chips
1/2 cup vegan mini marshmallows from Dandies
STEPS
1. Preheat oven to 350°F.
2. Add the flaxseed and water to a mixing bowl to make a flax egg. Let it sit for 5 minutes. Next, add the coconut sugar and vegan butter and whisk (or use an electric mixer if you have one)!
3. Add the flour, baking powder and salt & mix until fully incorporated. Fold in the chocolate chips and mini marshmallows.
4. Use a cookie scoop to scoop out the cookies and place them 2 inches apart on lined baking sheets.
5. Bake for 12 minutes, until the edges are golden brown. Let cool on the baking sheet for 10 minutes before transferring to cool further.
