Discover TVP (textured vegetable protein) with this delicious meal. I find TVP to be the plant protein that has the closest texture to ground meat. Simply rehydrate it and add spices, cook a little and it's ready! I present it to you here in a recipe with fajitas, but you could totally use it in any recipe to substitute ground meat (such as a bolognese sauce, lasagna, macaroni, etc. )
INGREDIENTS for the TVP mixture
2 cups TVP (textured vegetable protein)
1 garlic clove, minced
1 onion, chopped,
1 bell pepper, chopped
3 tbsp tamari sauce
2 tbsp ketchup
2 tbsp extra virgin olive oil
1 tbsp chili powder
1 tbsp maple syrup
Salt and pepper
INGREDIENTS for the sauce
¼ cup vegan mayo
1 tsp yellow mustard
½ tsp rice vinegar (or any vinegar)
¼ tsp paprika
1 tsp maple syrup
STEPS
1. Place the TVP in a large mixing bowl. Rehydrate the TVP with boiling water, cover and let it sit for about 10 minutes.
2. In the meantime, start cooking the bell pepper, onion and garlic in oil for about 5 minutes.
3. Add all the other ingredients for the TVP mixture (except the TVP). Mix well, then add the rehydrated TVP at the end.
4. Let the mixture evaporate for around 10 minutes, then serve.
5. Make your fajitas with bread of choice. Garnish with the sauce, lettuce, tomatoes and cilantro.
