BANANA BREAD

A great classic - banana bread. It's so easy to veganize any dessert! Simply replace the eggs with a flax egg. I also love adding chocolate chips and walnuts to my banana bread.


INGREDIENTS

2 ripe bananas

1 tbsp lemon juice

1/2 cup coconut oil, melted

1/2 cup non-dairy milk

3/4 cup coconut sugar

2 cups all-purpose flour

1 tsp salt

1 tsp baking powder

1 tsp baking soda

3 tbsp flax seeds

1/3 cup walnuts, chopped

1/3 cup cacao nibs

Cinnamon


STEPS

1. Preheat the oven to 350 °F.

2. Grease a standard loaf pan with either oil or vegan butter.

3. In a bowl, mash the bananas. Add the lemon juice, melted coconut oil, non-dairy milk and coconut sugar.Whisk everything together and set aside.

4. In another bowl, mix the flour, salt, baking powder, baking soda, flax seeds, nuts, cacao nibs and cinnamon together.

5. Pour the liquid ingredients in the dry ingredients bowl. Mix well.

6. Pour the mixture in the loaf pan and bake for 50 minutes or until you can stick a knife (or toothpick) in it and it comes out clean.

7. Let the bread cool down for at least 20 minutes before unmolding and cutting it.
