This easy vegan quesadilla recipe will please everyone! The combo between veggies, cheezy sauce & crispy tortilla makes for a delicious & fun meal!
INGREDIENTS
Tortillas, store-bought or homemade
1/2 onion, chopped
2 cloves of garlic, minced
1 bell pepper, chopped
1 cup mushrooms, sliced
1 can black beans, rinsed and drained
1/2 cup corn
1 tbsp tamari sauce
1 tsp garlic powder
1/2 tsp oregano
1/4 tsp paprika
Oil for cooking

STEPS
1. Heat oil in a pan and add the onion, garlic, bell pepper, mushrooms and tamari sauce. Cook over medium heat for around 5 minutes. Add corn, black beans and spices. Mix and cook another 5 minutes. Reserve
2. In another pan, lightly oiled, add an even layer of Mac n Cheeze sauce on a tortilla. Add a layer of the veggie mixture (around 4-5 tbsp) and place another tortilla on top. Cook for about 2 minutes. Flip and cook the other side another 2 minutes (until both sides are toasty).
3. Repeat for as much tortillas as you want, cut into 4 pieces & enjoy!
